Cauliflower mashed “potatoes”
Ingredients
1-2 bags frozen bagged cauliflower
1/4 cup shredded cheddar cheese
3 tablespoons unsalted butter
1/4 cup of 1% milk
salt, pepper and garlic powder to your liking.
Directions
Heat frozen veggies either in steamer bag or in a large pot with a little water to steam them.
In a bowl with an immersion blender, or in a food processor, puree the hot cauliflower with cheese, salt, pepper, butter and a shot of milk for creaminess. I like to serve it with lean steamed or baked chicken.
